  • Hi, everybody! I'm Khoai. Welcome to Khoai Lang Thang channel
  • Do you see it's very crowded today? There are some guys behind me
  • Today, we're going
  • to visit Ben Tre. I'm in Giong Trom, Ben Tre
  • And in front of me,
  • This is Mr. Hai. We're gonna "sponge" on Mr. Hai
  • And we're going to collect coconut tree core
  • Today we will have dishes about coconut
  • Because Giong Trom is an area that specializes in growing coconut of Ben Tre
  • I'll record some good foods and share with you
  • Today we have a chicken
  • and the coconut tree's core to make a salad
  • We got sweet soup, too
  • Just wait a minute!
  • You cut the coconut tree down yesterday, didn't you?
  • Here!
  • This coconut tree didn't bear many fruits, did it?
  • [Mr. Hai]: It does bear fruits but
  • [Khoai]: There are not many fruits? [Mr. Hai]: Right!
  • Mr. Hai cut the tree down yesterday already
  • I told him to leave this part for me but.... :(((((
  • Then,
  • He told me that he's afraid that we're not gonna make it so there we go!
  • We have to peel this off to take the core inside
  • Actually, this coconut tree's core is not too big
  • There are even some three or four times bigger than this
  • But we just can eat the core deeper inside so it would be smaller
  • [Mr. Hai]: Done! [Khoai]: Ok
  • [Khoai]: Is this often when offspring come home to eat like this?
  • [Mr. Hai]: Yeah, of course
  • Do you see the wood stove?
  • It has been a long time since I last saw this. My home used to use it in the part
  • Do you remember the clip that I cook in my hometown?
  • Then my home uses this kind of bed, too
  • This kind of stove help people to save money by using woods and leave in the garden
  • Nowadays, people move to gas stove already
  • This kind of stove is hard to find these days
  • Because there are just some specific pots that could be used on the wood stove
  • In the wet weather, there will be not many woods
  • - Are these pig's legs? - It's spare ribs
  • The coconut tree's core just remains this much left but we still need to peel more
  • We're still not able to eat this because it's still very hard
  • Let me introduce you, Mrs. Hai,
  • Mrs. Hai! Let everybody admire your face!
  • [Mrs. Hai]: No need~~
  • She will cook sweet soup today
  • Today we are going to cook sweet soup, aren't we?
  • Yeahhhh
  • These are ingredients, right?
  • we got red beans, black beans
  • ear spectrum
  • mung beans
  • [Mrs. Hai]: There shall be tapioca pearl too but I was too lazy
  • Here we go!
  • Normally, we should cut the top of the coconut first
  • we do the same with both dried or normal coconut
  • Cut the top will make it easier to peel the cover off
  • There are some skilled people who don't need to do that but they still can peel the cover off perfectly
  • when we already cut the top of the coconut
  • the cover won't be stick to the coconut
  • If you don't do it, it would be very hard to peel
  • Just need to pull lightly if we already cut the top
  • After we already peel all the cover off, we have to rid of the coir
  • when we grate the coconut, the coir won't drop in the bowl
  • [Mr. Hai]: It seems like there is a sprouted coconut [Khoai]: 100% sure
  • This is a sprouted coconut
  • When you see the coconut have this sprout on top
  • so it's sure that there's sprouted coconut inside
  • I used to eat this when I was young
  • The smaller the sprouted coconut is, the tastier it is
  • The bigger one will be less crunchy
  • Um~
  • There's a slight odor of coconut oil
  • a little sweet
  • spongy
  • [Khoai]: Mrs .Hai
  • You shouldn't eat much, it's not healthy if we eat too much
  • You will get diarrhea if eat this too much
  • [Mr. Hai]: Do you want to drink rice water? [Khoai]: Of course! Rice water guys, anyone?
  • [Someone voice]: Is there sugar? [Mr. Hai]: Yes [Khoai]: There's honey, too
  • [Khoai]: Mrs. Hai told me that there's even honey
  • [Khoai]: Ahhhh! Why you pour it to the jar???
  • [Mrs. Hai]: No! Not yet
  • [Mrs. Hai]: Not yet
  • I just pour some as it's too heavy for me to lift
  • [Mrs. Hai]: Leave the pot inside [Khoai]: Put it on the table
  • [Khoai]: I thought that you were about to pour it away
  • I really liked to drink this when I was young
  • Now we add sugar and honey
  • [Mr. Hai]: There's honey here!
  • [Mrs. Hai]: Add anything you like
  • The rice water is just available when you cook by the wood stove
  • It's so luxury!
  • When I was young, people in the countryside couldn't afford honey
  • In the past, those who were poor
  • They usually feed their infants with rice water mixed with sugar, they couldn't afford real milk
  • [The man]: I remember my childhood
  • [Khoai]: You also drunk this when you were young? [The man]: Yeah!
  • [The man]: When my grandmother still use the wood stove
  • You saw that the coconut tree's core is quite big when cutting down right?
  • But the edible coconut tree's core is very small
  • coconut tree's core has its distinct tastiness
  • so you could eat it raw or make a salad
  • I did make a video about the pineapple tree's core, it's a little bitter than this
  • So you have to parboil it and soak it with salt water before eating
  • But we don't need to do those with this core
  • [Mr. Hai]: Give him a piece to try
  • [Khoai]: Yeah! She is cutting it for me
  • [Mr. Hai]: Give him one
  • I usually eat this too
  • Because my home grow coconut too
  • Thank you
  • Um~
  • [Mrs. Hai]: Is it good?
  • It's very crunchy
  • And its taste is kinda sweet and fragrant
  • [Khoai]: Is this chicken 2kg? [Mrs. Hai]: More than 2kg
  • [Khoai]: It's more than 2 kg? [Mrs. Hai]: Yeah!
  • We slice them to make the salad right?
  • If we steam them, they need to be in square shape
  • We use the hard part to steam
  • The soft and crunchy part is tastier when making the salad
  • [Khoai]: Our garden is from here to the other side, right? [Mr. Hai]: Yes
  • I'm following Mr. Hai to pick coconut
  • to take coconut water to drink
  • There is a long stick with the scythe tied on top
  • Watch out!
  • These coconuts are all...
  • pre-ordered, aren't they?
  • [Mr. Hai]: They are all pre-ordered [Khoai]: Ah! Did you sign a long-term contract with a company already?
  • [Khoai]: That's great! I saw that everybody around here do so, too
  • [Mr. Hai]: Generally, everybody around here joins the organic coconut farming model
  • [Khoai]: That means we signed a long-term contract with a company to be an organic coconut supplier?
  • [Khoai]: Before the existence of this company
  • [Khoai]: Farmers struggled a lot when Chinese traders suddenly stopped buying coconut
  • [Mr. Hai]: Chinese traders always push prices
  • [Khoai]: And is this company now committed to the price? [Mr. Hai]: Yes, they are
  • [Khoai]: That's great!
  • Do you see anything at the stump?
  • Farmers usually use the dried coconut leaves to cover the soil
  • The soil will be soft and moist
  • The rotten coconut leaves will be a very good organic fertilizer
  • So the coconut trees will grow better
  • Coconut gardens usually have some...
  • small canals like this
  • People will take the mud and put them on the sides of the canals every year
  • so that to provide more alluvial for the coconut tree
  • By that way, people can improve the productivity of the coconut trees
  • They are finding coconut to pick
  • There will be a harvest time every month
  • When is the monthly harvest time?
  • [Mr. Hai]: Usually at the end of the month
  • It's like walking in the coconut forest, all around are coconut
  • Farmers here started contracting with some companies
  • to commit buying coconut from these farmers
  • The company will provide some guidance on how to grow organic coconut without chemical fertilizers
  • What is the name of the company you contracted with?
  • [Mr. Hai]: Betrimex [Khoai]: Ah!! Betrimex
  • Ah, the Betrimex company is the company with bottled coconut water
  • In the past, when someone asks about the specialty of Ben Tre
  • we usually answer coconut candy, right?
  • But from now, I will answer that is Cocoxim coconut water
  • If you see this product in the supermarket,
  • please buy to support
  • I usually drink the ones with pineapple and kumquat flavor
  • or organic, that's three flavors that I like the most from Cocoxim
  • one of Ben Tre brands
  • which is bottled in Ben Tre
  • in order to improve the quality of Ben Tre coconut
  • When I travel abroad or some markets like the USA or Japan
  • Bottled coconut water is usually from Thailand
  • Ben Tre coconut is much better than Thailand's
  • However, there's not any company officially exploit it yet
  • That's why I'm very glad when Cocoxim did it with very attractive products
  • and help farmers to have a stable life with the coconut
  • I hope that one day Ben Tre coconut water could compete with Thailand's
  • Now I will chop the coconut
  • Do you know any coconut chopping skill?
  • I saw that they perform some very special coconut chopping skill
  • [Woman's voice]: You chop like a real Ben Tre-er
  • [Khoai]: I'm a legit Ben Tre-er
  • [Khoai]: OMG
  • Because I study and work in Sai Gon,
  • I rarely chop a coconut
  • So my chopping skill is faded
  • [Mr. Hai]: You wanna try? [Khoai]: Yes, please
  • [Khoai]: I'm Ben Tre-er so don't think I can't do it
  • You would see that every house in Ben Tre has the coconut grater like this
  • Each house would have a different model of coconut grater
  • Use a piece of wood and attach a knife on the top
  • Now I'll step on this to hold it tight
  • [Khoai]: I can step on it, right? [Man]: Yes, step on it
  • Then you'll shave the coconut, shave from the outside to the inside
  • Don't begin with the center, people who don't know how to shave usually do like this
  • If we do like that, the center part will be hollow and it's harder to shave the outside part
  • So we'll start with the outside part
  • We do like this
  • Just gently, the more gently you shave, the finer the flakes
  • And we can extract more coconut milk
  • If we shave too hard, to make it faster
  • We cannot have much coconut milk
  • Look at the dog, he's sleeping in a weird posture
  • He's so weird
  • He knows we're laughing at him, he's looking us
  • What a weird dog, now he's sticking out his tongue
  • [Mrs.Hai]: I had a cat, they used to sleep together
  • [Khoai]: But why the cat died?
  • [Mrs.Hai]: I don't know [Khoai]: Yah~
  • [Mrs.Hai]: They slept together and don't think dogs hat cats, they don't
  • I also had 1 dog and a cat like that
  • They go everywhere with each other and the cat will climb on the dog to sleep
  • Mrs.Hai is making coconut milk
  • This is the first milk extracted
  • What will the first milk do? It will be used to make stewed shrimp
  • Mr.Hai is making it here
  • This is called "Dry fried shrimp with coconut milk"
  • This is the traditional dish of Ben Tre
  • When I studied in University
  • And my mom made this then sent to me
  • She made it more salty so I could preserve it
  • Then I put it in a fridge and I can eat it for whole week
  • After pouring coconut milk, we'll wait it to thicken
  • And the coconut milk will cover these shrimps
  • He saesoned the shrimps
  • Fish sauce, MSG and sugar
  • This is the chicken in the morning, it's boiled in here
  • Then we'll use the meat to make salad
  • The head and wings will be stewed with young coconut stem
  • This is only 1 chicken, but it looks a lot
  • Ah~ you added the pig bones too
  • I wondered why a chicken can look like this, so much meat inside
  • Yeah, it looks like there're 2 chickens inside
  • You can see that this stew is getting transparent
  • The coconut milk is getting transparent
  • and thicker
  • It's almost done
  • She comes here to try
  • It's hot, blow it
  • Is it good?
  • If you trying food, everything is good
  • These shrimps are M. brevicornis
  • These shrimps are wild, people don't raise them
  • So if we cook them like this, the shells are crunchier
  • And it's gonna be more delicious than raised shrimps
  • It's thickened
  • This is called "Coconut Poop" in Bến Tre
  • It sounds gross, right Mrs.Hai?
  • But the coconut milk, it'll thickened and become...
  • [Mrs.Hai]: The oil is coming out, now I'll turn of the oven
  • [Khoai]: We can eat them now [Mrs.Hai]: Yes
  • [Mrs.Hai]: If we cook longer, the shrimps will loose the rich flavor
  • [Mrs.Hai]: Done! [Khoai]: Done~ wait the rice to be cooked and let's eat
  • Oh~ this chicken is huge, the thigh is so big
  • Can you see in the pot, there's a huge jicama that is sliced in half
  • To make the broth sweeter OMG~
  • 2 super big chicken thighs
  • And this is young coconut stem, will be used to make salad later
  • Chicken salad in Western only need Vietnamese coriander to give enough aroma
  • Mrs.Hai said that she's angry and I have to make the salad by myself
  • This chicken has such a beautiful skin
  • This chicken...uhm...
  • Is like "Gà mái dầu", the skin is so thick
  • It's still hot, Mrs.Hai!!
  • This chicken might gave birth several times
  • Omg~
  • I bend it like this but it doesn't break
  • Now I know why you ask me to do it by myself
  • It still doesn't split when we use scissors
  • This chicken maybe older than us
  • With bones still have meat on, we can eat them later
  • We don't have to tear all the meat out, just like this
  • We just need to take for about 80-90% meat
  • People who love bones will eat them later
  • No one eat bones without meat
  • Yeah, we have to leave the bones to attract people who love bones like me
  • This is the kumquat juice, then mixed it with sugar
  • Fish sauce, chilli and garlic
  • Then pour into young coconut stem
  • The smell of this sauce makes me feel so hungry
  • We will mix the chicken later
  • Actually it's already good with only young coconut stem
  • Then have some thinly sliced Vietnamese coriander on top
  • This fried shallot is also made by Mrs.Hai, she made it to reserve and use later
  • Add some fried shallot
  • Pour it in!
  • Omg~ a whole big bowl of salad
  • This Vietnamese coriander is sliced shortly
  • I'll try it, I'm standing right here!
  • I'm waiting to try it
  • I'll try it
  • Uhm~
  • It's so good~
  • You can see that the shredded chicken salad looks not as good as chopped chicken salad
  • But it's better when you eat it, you don't have to eat the bones
  • And when we shred the chicken, the meat flesh is still in shape
  • So the meat is chewier than chopped chicken
  • With chopped chicken, it's harder to eat the bones
  • Have you ever seen a kumquat tree?
  • Normally, kumquat tree is short, but this one is kinda tall
  • This tree has been grown for a long time
  • Many kumquat are ripe
  • These are the aloe vera plants that Mrs.Hai has grown for so long and she don't know when she can use them
  • So today
  • we will pick them up
  • Aloe vera has resin, just like cactus
  • So when we peel them, we have to soak them into saline water
  • To get rid of the resin, you can smell the resin easily right after picking up, it smells just like cactus
  • We decided to pick up a few of them, to make sweet gruel
  • But we nearly picked up all of them
  • It's a lot
  • Right there
  • See? Bunches of culantro are right there
  • Now I will
  • pick them up
  • Omg~
  • Have you ever seen culantro flowers?
  • This is the flower
  • It has a lot of thorns
  • This is the old time culantro, which has small leaves
  • You can see in markets, they sell bigger culantro
  • Not small like this
  • In any countryside, there're always wild herbs like this
  • After pouring coconut milk, it's so beautiful
  • [Mrs.Hai]: Is it beautiful? [Khoai]: Yes
  • This coconut milk is just the thin one, the first milk will be added later
  • Because this is homemade, so you put it in
  • People who sell this gruel, they'll add thick coconut milk later when you eat
  • If we have any kinds of beans at home, we can add them to this gruel
  • And it will become beans and coconut milk gruel
  • This is young coconut stem, jicama and chicken soup
  • This soup also has some pig bones
  • It smells so good, right Mrs.Hai?
  • The soup has so much meat
  • These cubes are young coconut stem
  • Chopped young coconut stem
  • Do you have crispy rice?
  • The smell of crispy rice is so good
  • There is it!
  • We can eat this rice with stewed shrimps with coconut milk
  • They're a perfect match
  • We only have crispy rice if we cook rice by firewood
  • Mrs.Hai!!
  • Omg~
  • We haven't eat the main dishes yet and Mrs.Hai bring the sweet gruel for us
  • Let's take a photo before eating
  • To memorize a day that we come here and have lunch in Mr.Hai's house
  • Let's count, so we can prepare
  • 1...2...3...
  • Has my face turns red yet, Mrs.Hai?
  • [Mrs.Hai]: No, drink more
  • Omg~
  • If I cannot eat the gruel, you must take the responsibility
  • [Mrs.Hai]: So I will give that to you later
  • I can bring the gruel home?
  • [Mrs.Hai]: I'll drink this glass with you, on;y you [Khoai]: Okayy
  • Cheers~ no...
  • Okayy
  • [Mrs.Hai]: I'll drink first and cheers later!
  • Do you see Bến Tre women are so great?
  • They drink whole of the glass, without stopping
  • Okay, I promise I won't drink more
  • Goodbye everyone, I'm Khoai

Today Khoai returned to Giong Trom Ben Tre, one of the biggest coconut growing regions in Vietnam. Talking about coconuts, coconut is a tree that lives both salty and freshwater, and from the mountains to the blue sea, but there is one thing that little people pay attention to, the coconut in the saltwater will be small, the rice and the oil content is more, and coconut grown in freshwater area, the fruit is larger but the amount of oil is lower. The brackish water area in Giong Trom, Mo Cay Ben Tre is the most suitable place for the development of coconut trees, moderate brackish water, so coconut is big and the oil content is still high, combining the silt of the Mekong River, so Coconut quality in this place is considered the best in the world.
Today, Khoai has a chance to go to my hometown of Ben Tre to visit the organic coconut garden and was treated a delicious meal from the coconut by the Hai family. Coconut tree's core chicken salad, soup with coconut tree's core and pig's legs, shrimp brew with coconut milk and lastly is coconut milk sweet soup. It's so delicious and memorable, I hope you guys would enjoy this video!
